    Pickle the Turnips

    In a small saucepan, combine vinegar, water, and sugar. Heat until the sugar dissolves. Pour over the sliced turnips in a jar and let them sit for at least 30 minutes.

    Prepare the Cauliflower

    Preheat the oven to 200°C (400°F). Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden and crispy.

    Cook the Mushrooms

    Heat a skillet over medium-high heat and add olive oil. Season the king trumpet mushrooms with salt and pepper. Sear the mushrooms for 4-5 minutes on each side until browned and tender.

    In a bowl, mix Greek yogurt with sumac, salt, and pepper to taste.
