    Prepare the Lamb Belly

    Preheat your oven to 150°C (300°F). Rub the lamb belly with harissa paste, salt, and pepper. Place it in a roasting pan and drizzle with olive oil.

    Roast the Lamb

    Cover the roasting pan with aluminum foil and roast in the preheated oven for about 3 hours, or until tender.

    Prepare the Taktouka

    While the lamb is roasting, chop the tomatoes, bell pepper, onion, and garlic. Heat olive oil in a skillet over medium heat, then add onion and garlic, sauté until translucent.

    Add Vegetables

    Add the chopped tomatoes and bell pepper to the skillet. Cook until the vegetables are soft, about 10 minutes. Season with salt and cumin.

    Prepare the Spiced Honey

    In a small pan, combine honey, paprika, and a pinch of salt. Heat gently until warm and mixed. Set aside.

    Cook the Lentils

    Rinse the lentils and cook them in salted boiling water until tender, about 20 minutes. Drain and set aside.

    Serve

    Once the lamb is cooked, let it rest for 10 minutes before slicing. Serve the lamb with taktouka, drizzled with spiced honey and topped with crispy lentils and fresh cilantro.
