Preparation and Cooking

Make the Dumplings
In a mixing bowl, combine ricotta cheese, flour, egg, and salt. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.

Shape the Dumplings
Using flour-dusted hands, pinch off pieces of the dough and roll them into small balls. Set aside on a floured surface.

Cook the Dumplings
Bring a large pot of salted water to a boil. Drop in the dumplings and cook for about 3-5 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

Prepare the Onion Crunch
In a skillet, heat a tablespoon of black truffle butter over medium heat. Add the chopped onion and sauté until crispy and golden brown. Remove from heat.

Make the Lemon Crema
In a bowl, whisk together heavy cream, lemon juice, lemon zest, salt, and black pepper until slightly thickened.

Assemble the Dish
In a large serving dish, place the cooked dumplings. Drizzle with remaining black truffle butter, add onion crunch on top, and finish with lemon crema and chopped parsley.
