Baked Alaska Components

Method

Preparation Steps

  1. 1

    Prepare the Chocolate Cake

Bake the chocolate cake layer according to your preferred recipe. Allow it to cool completely and then cut it into a round shape if necessary.

  2. 2

    Make the Vanilla Semifreddo

In a bowl, whip together heavy cream and vanilla extract until soft peaks form. In a separate bowl, whisk together egg yolks and sugar until pale. Fold the whipped cream into the egg mixture, and freeze for at least 4 hours or until firm.

  3. 3

    Prepare the Candy Bar Nougat

Combine sugar, corn syrup, and water in a saucepan. Cook until it reaches the soft-ball stage. Whip egg whites until soft peaks form, then slowly pour in the syrup while continuing to whip until stiff. Fold in your choice of nuts and chocolaty mix-ins, then spread into a lined dish to cool.

  4. 4

    Assemble the Baked Alaska

Place the cooled chocolate cake layer on a serving plate. Spread the nougat over the cake, followed by a layer of the vanilla semifreddo. Freeze until firm.

  5. 5

    Make the Meringue

In a clean bowl, whip egg whites with cream of tartar until soft peaks form. Gradually add granulated sugar while continuing to whip until glossy and stiff peaks form. Fold in vanilla extract.

  6. 6

    Finish the Baked Alaska

Cover the frozen cake with meringue, using a spatula to create peaks. Use a kitchen torch to lightly brown the meringue. Drizzle with salted caramel sauce and sprinkle with chopped pistachios and chocolate almonds.

  7. 7

    Serve

Slice the Baked Alaska and serve immediately, optionally garnishing with torched sugar for dramatic flair.
