Calamari Preparation

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Make the Breading

    In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper together.

    Set Up Breading Station

    In another bowl, whisk together the eggs and milk. Set up a station with the dry mixture, egg mixture, and a plate for the breaded calamari.

    Bread the Calamari

    Dip each calamari ring first into the egg mixture and then into the flour mixture, making sure to coat evenly. Place them on the plate.

Frying

    Heat the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Fry the Calamari

    Fry the calamari in batches for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Cook the Marinara Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasoning

    Add the crushed tomatoes, oregano, salt, pepper, sugar, and basil leaves. Simmer for 15-20 minutes, stirring occasionally.
