Preparing the Chicken

Marinate the Chicken

In a mixing bowl, combine coconut milk, soy sauce, brown sugar, minced garlic, ground coriander, ground cumin, turmeric powder, and lime juice. Stir until well mixed. Cut chicken breasts into strips and add them to the marinade. Cover and refrigerate for at least 1 hour, preferably overnight to enhance flavor.

Soak the Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

Skewer the Chicken

Thread the marinated chicken strips onto the soaked skewers, ensuring they are evenly spaced.

Preheat the grill to medium-high heat.

Grill the Skewers

Place the chicken skewers on the grill. Cook for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks. Remove from grill and let rest for a few minutes.

Make the Sauce

In a saucepan over medium heat, combine the creamy peanut butter, soy sauce, brown sugar, lime juice, minced garlic, and water. Stir continuously until the mixture is smooth and heated through. Adjust the consistency with more water if necessary. Add red pepper flakes and salt to taste.
