Preparation
Prepare the Topping
Dice the tomatoes into small pieces and place them in a mixing bowl. Finely chop the fresh basil leaves and add them to the tomatoes.
Add Garlic
Mince the garlic cloves and add them to the tomato and basil mixture.
Season the Mixture
Add salt and black pepper to the mixture, and drizzle with 1 tablespoon of olive oil. Stir gently to combine all ingredients. Set aside to marinate for at least 10 minutes.
Grilling the Bread
Prepare the Baguette
Slice the baguette into 1/2 inch thick pieces.
Grill the Bread
Brush both sides of each baguette slice with the remaining 1 tablespoon of olive oil. Preheat a grill or grill pan over medium heat, then grill the bread slices for about 2-3 minutes on each side until golden brown and crispy.
Assembly
Top the Bruschetta
Once the bread is grilled, remove it from the grill and let it cool slightly. Spoon the prepared tomato and basil mixture generously over each slice of grilled bread.
Serve
Serve immediately, garnished with additional basil leaves if desired.
