    Prepare the Tomato Sauce

    In a saucepan, crush the plum tomatoes and cook them over medium heat for about 15 minutes. Add salt to taste. Remove from heat and let cool slightly.

    Preheat the Oven

    Preheat your oven to its highest setting (usually around 475°F or 250°C). Place a pizza stone or baking sheet inside to heat up.

    Shape the Pizza Dough

    On a floured surface, stretch or roll out the pizza dough into a round shape, about 12 inches in diameter. Transfer it to a piece of parchment paper for easy handling.

    Assemble the Pizza

    Spread a thin layer of the prepared plum tomato sauce over the dough, leaving a small border around the edges. Tear the fior di latte cheese into pieces and distribute them evenly over the sauce. Drizzle with olive oil.

    Carefully transfer the assembled pizza (with the parchment paper) onto the preheated pizza stone or baking sheet. Bake for about 10-12 minutes or until the crust is golden and the cheese is bubbling.
