Method

Cake Directions

  1. 1

    Prepare the Brown Butter

In a saucepan over medium heat, melt the butter and continue cooking until it turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.

  3. 3

    Combine Wet Ingredients

In another bowl, beat the eggs. Add the grated carrots and cooled brown butter, mixing well.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped pecans.

  5. 5

    Bake the Cake

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Divide the batter evenly between the pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  6. 6

    Cool the Cakes

Allow the cakes to cool in the pans for 10 minutes, then remove from pans and transfer to a wire rack to cool completely.
