Cookies and Bars

Method

Preparation

  1. 1

Preheat the oven to 350°F (175°C). In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, and then stir in the vanilla extract.

  2. 2

    Mix Dry Ingredients

In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  3. 3

    Add Mix-ins

Fold in the oats, chocolate chips, and chopped nuts (if using).

  4. 4

    Bake the Cookies

Drop rounded tablespoons of the cookie dough onto ungreased baking sheets. Bake for 10-12 minutes or until the edges are golden. Remove from the oven and let cool on wire racks.

  5. 5

    Prepare Cream Cheese Filling

In a mixing bowl, beat together the cream cheese, powdered sugar, and peanut butter until smooth and creamy.

  6. 6

    Assemble the Bars

Spread a layer of the cream cheese filling over half of the cooled cookies. Top with another cookie to create a sandwich. Repeat with remaining cookies.
