Prepare the Venison
Slice the venison steak into thin strips, about 1 inch wide.
Prepare the Jalapenos
Slice the jalapenos in half lengthwise, removing seeds for less heat if desired.
Assemble the Roll Ups
Place a slice of smoked mozzarella and a half jalapeno on each strip of venison. Roll up tightly and secure with a toothpick.
Wrap with Bacon
Wrap each venison roll with a strip of bacon, making sure to cover the filling completely.
Prepare the Glaze
In a small bowl, mix molasses and Dijon mustard until well combined.
Brush the Roll Ups
Brush the molasses Dijon mixture over each bacon-wrapped roll.
Cook the Roll Ups
Preheat your grill or oven to medium-high heat. Cook the roll ups for about 15-20 minutes, turning occasionally until the bacon is crispy and the venison is cooked through.
Serve
Remove toothpicks and serve hot as an appetizer or main dish.
