Prepare the Steak
In a skillet, heat olive oil over medium-high heat. Season the flank steak with salt, black pepper, and taco seasoning. Cook the steak for about 5-7 minutes on each side, or until it reaches your desired level of doneness. Remove from heat and let it rest for 5 minutes before slicing thinly.
Assemble the Quesadilla
On one half of each tortilla, layer sliced steak, sautéed vegetables, and shredded cheese. Fold the other half of the tortilla over the filling.
Cook the Quesadilla
