Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into evenly sized sticks, about 1/4 inch thick.

Soak the Potatoes
Place the potato sticks in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

Dry the Potatoes
Drain the potato sticks and pat them dry with a clean towel to remove moisture.

Fry the Potatoes
Carefully add the dried potato sticks to the hot oil in batches. Fry for about 5-7 minutes or until golden brown and crispy. Avoid overcrowding the pot.

Drain and Season
Remove the fries from the oil with a slotted spoon and place them on paper towels to drain excess oil. While still hot, sprinkle with salt and black pepper to taste.
