Preparing the Baked Potatoes

    Preheat the oven to 425°F (220°C). Scrub the russet potatoes under cold water and pat them dry. Pierce each potato several times with a fork. Bake directly on the oven rack for 45-60 minutes, or until tender when pierced with a fork.

    Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin layer of potato in the skins. Add butter, sour cream, shredded cheddar cheese, chopped chives, salt, and black pepper to the scooped potato. Mash and mix until creamy and well combined.

    Spoon the filling back into the potato skins and place them on a baking sheet. Return to the oven and bake for an additional 15 minutes until heated through and slightly crispy on top.

Cooking the Steak
