    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the baking potatoes under cold water and pat them dry. Pierce each potato several times with a fork. Rub them with olive oil and sprinkle with salt.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

    Cook the Steak

    While the potatoes are baking, season the steak with black pepper and salt. Heat a grill pan or skillet over medium-high heat. Add a tablespoon of olive oil and cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

    Prepare the Filling

    Once the steak is rested, chop it into small pieces. Set aside.

    Stuff the Potatoes

    When the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently push the ends to open. Fluff the insides with a fork and add butter, sour cream, chives, shredded cheese, and chopped steak. Mix gently.

    Finish and Serve

    Top the stuffed potatoes with additional cheese and chives if desired. Serve warm and enjoy!
