Prepare the Potatoes

    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes under running water, then poke holes all over with a fork. Rub each potato with olive oil, and sprinkle salt and black pepper. Place the potatoes directly on the oven rack and bake for 45-60 minutes or until tender when pierced with a fork.

Cook the Steak

    Prepare and Cook the Steak

    While the potatoes are baking, season the steak with garlic powder, onion powder, salt, and pepper. Heat a skillet over medium-high heat and add the butter. Once melted, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for a few minutes before slicing into bite-sized pieces.

Assemble the Dish

    Stuff the Potatoes

    Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit lengthwise down the center of each potato and gently push the ends to open them up. Fluff the insides with a fork and add the cooked steak pieces. Top with shredded cheddar cheese, sour cream, bacon bits, and chopped chives.
