Prepare the Baked Potatoes

    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes under cold water. Pat them dry, then pierce each potato several times with a fork. Rub each potato with olive oil and sprinkle with salt and black pepper. Place the potatoes directly on the oven rack and bake for about 45-60 minutes until tender.

Prepare the Grilled Salmon

    Grill the Salmon

    While the potatoes are baking, preheat your grill or grill pan over medium heat. In a bowl, combine lemon juice, garlic powder, dill, olive oil, salt, and black pepper. Coat the salmon fillets with the mixture. Grill the salmon for about 4-5 minutes on each side, or until cooked through and flaky. Remove from the grill and let it rest.

Assemble the Over Stuffed Baked Potatoes

    Stuff the Potatoes

    Once the potatoes are done baking, remove them from the oven and let cool for a few minutes. Cut a slit in the top of each potato and gently scoop out some of the flesh to make room for the filling. Flake the grilled salmon and fill each potato generously. Top with sour cream, shredded cheddar cheese, and chopped chives.
