Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, and sauté until softened. Add minced garlic and cook for another minute. Add chicken breast and cajun seasoning, cooking until the chicken is cooked through and no longer pink, about 7-10 minutes. Remove from heat and let cool slightly.

Make the Filling
Once the chicken is cool enough to handle, chop it into bite-sized pieces. In a mixing bowl, combine the chicken, cooked vegetables, cream cheese, shredded cheese, and half of the green onions. Mix until well combined.

Stuff the Potatoes
When the potatoes are done baking, remove them from the oven and let cool for a few minutes. Cut each potato lengthwise and gently scoop out some of the flesh, leaving a border. Fill each potato with the cajun chicken mixture, packing it tightly.

Bake Again
Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the filling is heated through and the top is slightly golden.

Serve
Remove from oven, garnish with remaining green onions, and serve hot.
