    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Scrub the potatoes and poke several holes in each with a fork. Rub them with olive oil and sprinkle with salt and black pepper. Place potatoes directly on the oven rack and bake for about 45-60 minutes, or until tender.

Cooking Shrimp

    Blacken the Shrimp

    In a bowl, mix the paprika, cayenne pepper, garlic powder, onion powder, thyme, salt, and black pepper. Toss the shrimp in the spice mixture until evenly coated. Heat butter in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they are cooked through and blackened.

Assembling the Dish

    Stuff the Potatoes

    Once the potatoes are baked, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently fluff the inside with a fork. Fill each potato with the blackened shrimp, top with sour cream, green onions, and shredded cheese.
