Preparation and Cooking Instructions

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash the russet potatoes thoroughly and pierce them with a fork several times. Rub them with olive oil and sprinkle with salt. Bake the potatoes directly on the oven rack for about 45-60 minutes or until they are tender.

    Grill the Salmon

    While the potatoes are baking, heat a grill or grill pan over medium-high heat. In a small bowl, mix olive oil, lemon juice, garlic powder, salt, and black pepper. Brush the salmon fillets with the mixture. Grill the salmon for about 5-7 minutes on each side or until cooked through and flakes easily with a fork.

    Stuff the Baked Potatoes

    Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit in the top of each potato and gently push the ends to open them up. Scoop out some of the potato flesh and mix it with sour cream, chives, and half of the shredded cheese. Spoon the mixture back into the potatoes.

    Serve

    Top each stuffed potato with a portion of grilled salmon and sprinkle the remaining shredded cheese on top. Optionally, garnish with additional chives and serve immediately.
