Prepare the Chicken
Rinse the chicken halves under cold water and pat them dry with paper towels.

In a bowl, combine paprika, brown sugar, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well.

Rub olive oil over the chicken halves and then generously apply the spice rub on all sides of the chicken.

Prepare the Smoker
Preheat your smoker to 225°F (107°C). Soak the applewood chips in water for at least 30 minutes before using.

Place the chicken halves in the smoker, skin side up. Add the soaked applewood chips to the smoker box or directly on the coals.
