Measure the Rice
Measure out 1 cup of long-grain white rice and set aside.

Sauté the Vegetables
In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.

Cook the Chicken
Add the chicken pieces to the pot and cook until they are browned on all sides, about 5-7 minutes.

Add Rice and Liquids
Stir in the rice, diced tomatoes (with juices), chicken broth, Cajun seasoning, bay leaves, salt, and black pepper. Bring to a boil.

Simmer
Once boiling, reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

Rest and Serve
Remove from heat and let it sit, covered, for 5 minutes. Fluff the jambalaya with a fork and serve hot, garnished with chopped parsley and sliced green onions if desired.
