Making the Dough

Activate the Yeast
In a small bowl, warm the milk to about 100°F (38°C). Sprinkle the active dry yeast over the milk and let it sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, granulated sugar, and salt.

Combine Ingredients
Create a well in the center of the dry ingredients. Add the activated yeast mixture, eggs, and melted unsalted butter into the well. Mix until a soft dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until doubled in size.
Frying the Beignets

Prepare the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). You can use a thermometer to check the temperature.

Shape the Beignets
Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out to about 1/4 inch thickness. Cut into squares, about 2-3 inches in size.

Fry the Beignets
Carefully drop a few squares of dough into the hot oil, making sure not to overcrowd the pot. Fry for about 2-3 minutes on each side until golden brown.

Drain and Cool
Using a slotted spoon, remove the beignets from the oil and drain them on paper towels. Let them cool slightly.
