Instructions
1. Marinate the Lamb
In a large bowl, combine the garlic, cumin, coriander, paprika, cinnamon, turmeric, olive oil, salt, and pepper. Add the lamb and coat well. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
2. Cook the Lamb
Preheat your oven to 375°F (190°C). Place the marinated lamb on a baking tray and roast for about 1.5 to 2 hours, or until the meat is tender and cooked through. Let it rest for 10 minutes before slicing.
3. Prepare the Garlic Sauce
In a bowl, mix the yogurt, lemon juice, tahini, water, and crushed garlic until smooth. Adjust seasoning with salt to taste.
4. Assemble the Shawarma
Slice the cooked lamb thinly. Serve it in pita bread, topped with chopped parsley and drizzled with garlic sauce.
