Kebab Preparation
1. Marinate the Lamb
In a large bowl, combine the cubed lamb shoulder, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, olive oil, and lemon juice. Mix well to coat the lamb. Cover and refrigerate for at least 2 hours, preferably overnight.
2. Prepare the Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated lamb onto the skewers, leaving a little space between each piece.
3. Grill the Kebabs
Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
4. Serve
Remove the kebabs from the grill and let them rest for a few minutes. Serve hot with cooked rice and garnish with chopped fresh parsley.
