Method

Prepare the Lamb Shank

Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and cook for an additional minute.

Brown the Lamb Shanks

Add the lamb shanks to the pot and brown them on all sides.

Season and Simmer

Sprinkle turmeric, salt, black pepper, and add the cinnamon stick. Pour in the lamb stock or water, ensuring the shanks are submerged. Bring to a boil, then reduce heat to low and cover. Simmer for 2-3 hours until the meat is tender.

Prepare the Baghali Polo

Rinse and Soak the Rice

Rinse the basmati rice under cold water until the water runs clear. Soak in water for at least 30 minutes, then drain.

Cook the Rice

In a large pot, bring 4 cups of water to a boil. Add the drained rice and 1 tsp of salt. Cook until the rice is halfway done (about 5-7 minutes), then drain and set aside.

Combine the Ingredients

In the same pot, layer the partially cooked rice, fava beans, chopped dill, and barberry. Cover the pot with a lid and steam on low heat for about 15-20 minutes until fully cooked.

Serve

Plate the Dish

Shred the lamb shank meat and serve on a plate alongside the fragrant baghali polo. Garnish with fresh parsley.
