Falafel

Toppings

Kale and Herbs Salad (for gluten-free option)

Method

Preparing the Falafel

1

Soak the Chickpeas

Soak the chickpeas in water overnight. Drain and rinse before using.

2

Blend the Ingredients

In a food processor, combine soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Blend until a coarse mixture forms.

3

Form the Falafel Balls

Shape the mixture into small balls or patties and place on a baking sheet.

4

Fry the Falafel

In a deep frying pan, heat the oil over medium-high heat. Fry the falafel balls until golden brown, about 3-4 minutes per side. Drain on paper towels.

Assembling the Bowl

5

Prepare the Toppings

Chop the tomato and cucumber. Arrange the house-made pickles, hummus, and tahini in bowls.

6

Build Your Bowl

In a bowl or pita, layer the falafel, tomato, cucumber, pickles, and drizzle with tahini and zhoug. Garnish with fresh parsley.

Kale and Herbs Salad (for gluten-free option)

7

Mix the Salad Ingredients

In a bowl, combine chopped kale, fresh herbs, olive oil, lemon juice, and salt. Toss to combine.
