    Prepare the Ingredients

    Clean the squash blossoms by removing the stamen and rinsing gently. Slice the mushrooms and dice the tomatoes.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the mushrooms and sauté until golden brown. Add the squash blossoms and cook for 2-3 minutes until wilted. Season with salt and black pepper.

    Assemble the Tlayuda

    On each tlayuda, spread a layer of vegetarian beans followed by the sautéed mushrooms and squash blossoms. Sprinkle the diced tomatoes and shredded Oaxacan cheese on top.

    Drizzle the squash blossom mole over the assembled ingredients.

    Cook the Tlayuda

    Heat a skillet or griddle over medium-high heat. Place the tlayudas one at a time and cook until the bottom is crispy and the cheese is melted, about 3-5 minutes.
