    Prepare the Ribs

    Season the pork ribs with salt and pepper. Heat olive oil in a large pot over medium heat and brown the ribs on all sides. Remove from pot and set aside.

    Prepare the Mole Sauce

    In the same pot, add chopped onion and garlic. Sauté until soft. Add chopped tomatoes and cook until they break down.

    Blend the Mole

    Toast guajillo and pasilla chiles in a dry pan until fragrant. Remove stems and seeds, then add to the pot with sautéed vegetables. Add chicatana ants, chicken broth, and the cinnamon stick. Blend until smooth.

    Cook the Ribs with Mole

    Return the ribs to the pot, cover with the mole sauce, and simmer for about 1.5 hours, or until the ribs are tender.

    Serve
