Prepare the Filling
In a large skillet, heat a small amount of oil over medium heat. Add the chopped onion and bell pepper, sautéing until soft. Stir in the minced garlic and cook for an additional minute.

Combine with Chicken
Add the shredded chicken to the skillet and mix well. Pour the mole coloradito sauce over the chicken mixture and stir to combine. Season with salt and pepper to taste. Cook for about 5-7 minutes until heated through.

Prepare the Tortillas
In a separate skillet, heat the vegetable oil over medium heat. Warm the corn tortillas briefly to make them pliable.

Assemble the Taquitos
Place a spoonful of the chicken mixture on one end of each tortilla, roll it tightly, and secure with a toothpick if necessary. Repeat until all the filling is used.

Fry the Taquitos
Carefully add the rolled taquitos to the hot oil, frying until golden brown and crispy on all sides. This should take about 3-4 minutes.

Remove the taquitos from the oil and drain on paper towels. Serve hot, topped with crema and crumbled queso fresco.
