    Prepare the Octopus

    Bring a large pot of salted water to a boil. Add the octopus and cook for about 45 minutes, or until tender. Drain and let cool.

    Grill the Octopus

    Preheat the grill to medium-high heat. Cut the octopus into manageable pieces, brush with olive oil, and season with salt and pepper. Grill for about 3-4 minutes on each side until charred.

    Cook the Fingerling Potatoes

    Boil the fingerling potatoes in salted water until fork-tender, about 15-20 minutes. Drain and toss with olive oil, salt, and black pepper.

    Prepare the Green Chorizo

    In a skillet over medium heat, cook the green chorizo until fully cooked, about 5-7 minutes. Drain excess fat if necessary.

    Make the Red Tomatillo Sauce

    Roast the tomatillos and garlic cloves in a hot oven until charred, about 10-15 minutes. Blend the roasted tomatillos with salt, pepper, and a squeeze of lemon juice until smooth.

    In a small saucepan, heat olive oil over low heat. Add the cherry tomatoes and cook gently until they begin to burst, about 10-15 minutes.

    Plate and Serve

    On a large plate, arrange the grilled octopus, fingerling potatoes, and green chorizo. Drizzle with red tomatillo sauce and top with confit tomatoes. Garnish with additional lemon juice if desired.
