    Prepare the Atole

    Stir in the diced green chiles and corn, and cook for another 2-3 minutes.

    Add Broth and Seasoning

    Pour in the vegetable broth and bring to a simmer. Season with salt and black pepper, then let it cook for about 10 minutes until the flavors meld.

    Cook the Fish

    While the atole is simmering, heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Season the fish fillets with salt and pepper.

    Sear the Fish

    Place the fish in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.

    Prepare Garlic Crisps

    In a small pan, heat a teaspoon of olive oil and add minced garlic. Sauté until golden and crispy. Remove and set aside.

    Serve

    To serve, ladle the green chile atole into bowls, top with the seared fish, and garnish with garlic crisps and fresh cilantro.
