Prepare the Oysters
Preheat your wood grill or oven to a high temperature. If using a grill, make sure you have a bed of hot coals.

Roast the Oysters
Place the oysters on the grill or in the oven, cupped side down, and roast for about 5-7 minutes, or until the oysters are opened and the meat is cooked.

Prepare the Topping
In a small bowl, combine the mole amarillo, crumbled cotija cheese, and breadcrumbs. Add olive oil to the mixture and stir until well combined.

Top the Oysters
Carefully remove the oysters from the grill or oven. Spoon the mole amarillo mixture generously over each oyster.

Finish and Serve
Return the topped oysters to the grill for an additional 2-3 minutes to slightly toast the topping. Remove from heat, garnish with chopped cilantro, and serve with lime wedges.
