    Prepare the Potato Filling

    Peel and chop the potatoes into small cubes. Boil them in salted water until tender, about 15 minutes. Drain and mash the potatoes.

    Cook the Chorizo

    In a skillet, cook the chorizo over medium heat until browned and fully cooked, about 5-7 minutes. Drain excess fat and mix with the mashed potatoes. Season with salt to taste.

    Make the Dough

    In a mixing bowl, combine masa harina with water and a pinch of salt. Knead until a smooth dough forms. Let it rest for 10 minutes.

    Shape the Molotes

    Take a small ball of dough and flatten it into an oval shape. Place a spoonful of the potato and chorizo mixture in the center, fold the dough over, and seal the edges.

    Fry the Molotes

    Heat oil in a deep skillet over medium heat. Fry the molotes in batches until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.

    Prepare Avocado Mousse

    In a blender, combine the avocado, lime juice, and salt. Blend until smooth and creamy.

    Plate the fried molotes and drizzle with mole coloradito. Top with crema, crumbled queso fresco, and cotija cheese. Garnish with chapulines for a crunchy finish. Serve with avocado mousse on the side.
