Prepare the Roasted Pork Rib

Season and Roast
Preheat the oven to 300°F (150°C). In a bowl, mix garlic powder, paprika, cumin, salt, and black pepper. Rub the mixture over the pork ribs and drizzle with olive oil. Place the ribs on a baking sheet and roast for 2.5 to 3 hours until tender.

Cook the Beans
In a skillet, heat oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the canned refried beans and cook until heated through, about 5-7 minutes. Set aside.
Prepare the Memela

Make the Masa Pancakes
In a large bowl, combine masa harina, water, and salt. Mix until a dough forms. Divide the dough into smaller balls and flatten them into discs. Heat oil in a skillet over medium heat and cook each disc for about 2-3 minutes on each side until golden brown.
Assemble the Dish

Combine and Serve
On each toasted masa pancake, layer the refritos, roasted pork rib (shredded), and top with crema, crumbled queso fresco, and tomatillo avocado sauce. Serve warm.
