    Prepare the Adobo

    In a skillet, toast the guajillo puya and costeño peppers over medium heat until fragrant. Soak them in hot water for about 15 minutes, then blend with garlic, onion, salt, and black pepper until smooth.

    Marinate the Beef

    Rub the beef tenderloin with the adobo sauce, ensuring it is well coated. Let it marinate for at least 1 hour, or preferably overnight in the refrigerator.

    Prepare the Vegetables

    Peel and chop the potatoes and carrots into bite-sized pieces. Set aside.

    Make the Masa Dumplings

    In a bowl, combine masa harina, water, and a pinch of salt to form a dough. Shape into small dumplings (about 2 inches in diameter).

    Grill the Beef

    Preheat the grill to medium-high heat. Grill the marinated beef tenderloin for about 6-8 minutes on each side, or until cooked to your desired doneness. Let it rest before slicing.
