Prepare the filling
In a mixing bowl, combine ground pork, minced garlic, ginger, green onions, soy sauce, sesame oil, and salt. Mix well until all ingredients are evenly incorporated.

Fill the dumplings
Take one dumpling wrapper and place a small spoonful of filling in the center. Moisten the edges with water, fold the wrapper in half to create a half-moon shape, and pinch the edges to seal. Repeat until all filling is used.

Cook the dumplings
Heat a non-stick pan over medium heat and add a little oil. Place the dumplings in the pan and fry for 2-3 minutes until the bottoms are golden brown. Add a small amount of water to the pan, cover, and steam for about 5 minutes or until cooked through.

Prepare the sauce
In a small bowl, mix together black vinegar, chili oil, minced garlic, and soy sauce.

Serve the dumplings hot with the sauce for dipping.
