Prepare the Cake Batter

    Melt Chocolate and Butter

    In a microwave-safe bowl, combine the semi-sweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring after each interval, until melted and smooth. Set aside to cool slightly.

    Mix Dry Ingredients

    In a separate bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, whisk the eggs, egg yolks, and vanilla extract until frothy. Gradually add the melted chocolate mixture into the egg mixture, stirring constantly.

    Combine All Ingredients

    Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.

Bake the Lava Cakes

    Preheat Oven

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder.

    Fill Ramekins

    Evenly divide the cake batter among the prepared ramekins, filling each about 3/4 full.

    Place the ramekins on a baking sheet and bake for 12-14 minutes until the edges are firm but the center is soft.

    Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a serving plate. Serve immediately with optional garnishes.
