Wood Roasted Brussels

Preparation and Cooking

Preheat the Oven
Preheat your wood-fired oven or conventional oven to 400°F (200°C).

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow outer leaves. Toss them with olive oil and salt in a large bowl.

Roast the Brussels Sprouts
Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the oven for 20-25 minutes, or until they are tender and caramelized, turning halfway through.

Prepare the Almonds
While the Brussels sprouts are roasting, heat a small skillet over medium heat. Add the sliced almonds and toast them for 3-5 minutes, or until golden brown. Remove from heat and drizzle with malt vinegar.

Make the Vinaigrette
In a small bowl, whisk together the apple butter and a splash of olive oil to create a vinaigrette.

Assemble the Dish
Once the Brussels sprouts are roasted, remove them from the oven. Drizzle the apple butter vinaigrette over the sprouts, then add the toasted almonds, crumbled Gorgonzola, and pickled cranberries.
