Roasting Beets
1. Roast the Beets
Preheat the oven to 400°F (200°C). Wash and trim the beets, then rub them with olive oil, salt, and pepper. Wrap each beet in aluminum foil and place them on a baking sheet. Roast for 45-60 minutes until tender. Let cool, peel, and slice.

3. Prepare Ricotta
In a large pot, combine whole milk and heavy cream. Heat over medium heat until it reaches about 190°F (88°C). Remove from heat, stir in vinegar and salt, and let it sit for 10 minutes. Strain through cheesecloth and let it drain for 1 hour.
Making Granola
4. Bake Granola
Preheat the oven to 350°F (175°C). In a bowl, mix rolled oats, honey, nuts, coconut flakes, and salt. Spread the mixture on a baking sheet and bake for 20-25 minutes, stirring halfway through until golden brown. Let cool.
Making Vinaigrette
5. Prepare Vinaigrette
In a small bowl, whisk together raw honey, apple cider vinegar, olive oil, salt, and pepper. Adjust seasoning to taste.
