Preparation Instructions
- 1
Prepare the Brown Butter Breadcrumbs
In a skillet over medium heat, melt 4 tablespoons of unsalted butter. Add 1 cup of breadcrumbs and cook, stirring frequently, until the breadcrumbs are golden brown and fragrant. Remove from heat and let cool.
- 2
Prepare the Vegetables
Wash and chop the romaine lettuce into bite-sized pieces. Slice the cucumber into thin rounds. If you haven't done so already, prepare the pickled red onion.
- 3
Make the Caesar Dressing
In a bowl, whisk together 2 egg yolks, 2 tablespoons of lemon juice, 1 tablespoon of Dijon mustard, 2 anchovy fillets (mashed), 1 clove of minced garlic, and 1/2 cup of olive oil until emulsified. Season with salt and pepper to taste.
- 4
Assemble the Salad
In a large bowl, combine the chopped romaine, cucumber slices, pickled red onion, and grated Parmesan cheese. Drizzle the Caesar dressing over the salad and toss to coat evenly.
- 5
Finish with Breadcrumbs
Top the salad with the brown butter breadcrumbs and additional Parmesan cheese if desired. Serve immediately.
