Caramelize the Onions
In a large skillet, heat olive oil over medium heat. Add sliced onions and cook slowly, stirring occasionally, until they are caramelized and golden brown, about 30 minutes.

Add Sugar and Vinegar
Stir in the brown sugar and balsamic vinegar, and continue to cook for an additional 10-15 minutes, until the mixture thickens. Add fresh rosemary and mix well.

Prepare Sausage
While the marmalade is cooking, prepare the house-made Italian sausage according to your recipe or preference.

Assemble the Dish
On a baking sheet, layer the mozzarella cheese, followed by the caramelized onion and rosemary marmalade, pieces of gorgonzola, and finally the cooked Italian sausage. Bake in a preheated oven at 375°F (190°C) for about 15-20 minutes or until the cheese is melted and bubbly.

Garnish and Serve
Remove from the oven, sprinkle with extra fresh rosemary, and serve warm.
