Cook the Pasta
Preheat your oven to 350°F (175°C). In a large pot of boiling salted water, add the elbow macaroni and cook until al dente. Drain and set aside.

Make the Cheese Sauce
In a large saucepan, melt 1 stick (1/2 cup) of butter over medium heat. Add the flour and whisk for about 2 minutes until it forms a paste. Gradually whisk in the milk, stirring constantly until the mixture thickens (about 5-7 minutes). Stir in the cheddar, asiago, and gruyere cheeses until melted and smooth. Season with salt, black pepper, and paprika.

Combine Pasta and Cheese Sauce
Add the cooked macaroni to the cheese sauce and stir until fully coated.

Assemble and Bake
Transfer the macaroni and cheese mixture to a greased baking dish. Evenly sprinkle the breadcrumb mixture on top. Bake in the preheated oven for 25-30 minutes until bubbly and golden.

Remove from the oven and let cool for a few minutes before serving.
