Method

Prepare the Fries

    Fry Preparation

    Preheat your oven to 425°F (220°C). Cut the potatoes into fry shapes and soak them in water for 30 minutes. Drain and dry thoroughly.

    Seasoning

    Toss the fries with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.

    Baking

    Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

Cook the Mussels

    Sauté Aromatics

    In a large pot, melt the butter over medium heat. Add the shallots and garlic, cooking until softened and fragrant.

    Add Mussels and Wine

    Pour in the white wine and bring to a simmer. Add the mussels, cover the pot, and cook for about 5-7 minutes until the mussels have opened.

    Finish with Lemon and Parsley

    Stir in the lemon juice and chopped parsley. Discard any mussels that did not open.

Serve

    Plate the Dish

    Serve the mussels in a bowl with the broth, accompanied by a side of crispy fries and slices of baguette for dipping.
