Preparing the Burger Patty

Mix Ingredients

In a large bowl, combine the cooked black beans, brown rice, grated zucchini, chopped mushrooms, chopped onion, garlic powder, ground cumin, salt, black pepper, and flour. Mix until well combined.

Form Patties

Divide the mixture into four equal portions and shape each portion into a patty.

Cook Patties

Heat a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.

Making the Slaw

Prepare Slaw

In a bowl, combine the shredded green cabbage with vegan mayonnaise. Mix well and set aside.

Making Spiced Fries

Prepare Fries

Preheat the oven to 425°F (220°C). Toss the cut potatoes with olive oil, paprika, salt, and black pepper. Spread them on a baking sheet and bake for 25-30 minutes, flipping halfway through, until crispy.

Making Aioli

Mix Aioli

In a small bowl, combine vegan mayonnaise, minced garlic, lemon juice, and salt. Stir until smooth.

Assembling the Burger

Build the Burger

Spread BBQ sauce on the bottom half of each brioche bun. Place a burger patty on top, followed by the green cabbage slaw, house pickles, and the top half of the bun.
