Fried Fingerling Potatoes

Grilling Fish

    Prepare the Swordfish

    Drizzle olive oil on the swordfish steaks and season with salt and black pepper. Let marinate for at least 15 minutes.

    Grill the Swordfish

    Preheat the grill to medium-high heat. Grill the swordfish steaks for about 4-5 minutes on each side or until they are cooked through and have nice grill marks.

Making Caldeirada

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.

    Add Peppers and Tomatoes

    Add the sliced Jimmy Nardello peppers and roasted tomatoes. Stir in the vegetable broth, paprika, and saffron. Simmer for about 10 minutes.

Preparing Fried Potatoes

    Fry the Potatoes

    In a deep pan, heat vegetable oil over medium-high heat. Add the halved fingerling potatoes and fry until golden brown and crispy. Remove and drain on paper towels, then sprinkle with salt.

Making Basil Aioli

    Mix Aioli Ingredients

    In a bowl, combine mayonnaise, chopped basil, lemon juice, and minced garlic. Mix well and adjust seasoning to taste.

Plating the Dish

    Serve

    On a plate, arrange the grilled swordfish, spoon the caldeirada around it, add a side of fried fingerling potatoes, and drizzle with basil aioli.
