Crispy Calamari

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Marinate

    In a bowl, pour the buttermilk over the calamari rings, ensuring they are fully submerged. Let them marinate for at least 30 minutes in the refrigerator.

    Mix Dry Ingredients

    In a separate bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

    Heat the Oil

    In a large, heavy pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat the Calamari

    Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, coating thoroughly.

    Fry the Calamari

    Carefully place the coated calamari rings in the hot oil, frying in batches to avoid overcrowding. Cook for about 2-3 minutes or until golden brown and crispy.

    Remove the fried calamari with a slotted spoon and drain on paper towels. Serve immediately.

Spicy Aioli

    Combine Ingredients

    In a small bowl, whisk together the mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt to taste until smooth.

    Taste and Adjust

    Taste the aioli and adjust the seasoning, adding more sriracha for heat or more lemon juice for acidity as desired.

    Serve the spicy aioli alongside the crispy calamari for dipping.
