Method
Preparation

- 2
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth.
- 3
Whisk Eggs and Sugar
In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and fluffy.
- 4
Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture until well combined. Be careful not to deflate the eggs.
- 5
Add Flour and Vanilla
Sift the all-purpose flour into the chocolate mixture, add the vanilla extract, and fold gently until just combined.
Baking
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 7
Bake
Place the ramekins in the preheated oven and bake for 10-12 minutes. The edges should be firm, but the center should still be soft.
- 8
Cool Slightly
Once baked, remove the ramekins from the oven and allow them to cool for about 1-2 minutes.
- 9
Serve
Run a knife around the edges of each fondant to loosen it. Invert onto a plate and serve immediately, optionally dusting with powdered sugar and adding a scoop of vanilla ice cream and fresh berries.
