Broth Preparation

    Make the Broth

    In a large pot, combine the pork bones and water. Bring to a boil over high heat, then reduce to a simmer and cook for at least 4 hours, skimming off any foam that forms on the surface.

    Add Seasonings

    After 4 hours, add soy sauce, miso paste, mirin, and salt to the broth. Stir well and let it simmer for another 30 minutes.

Egg Preparation

    Cook the Eggs

    In a small pot, bring water to a boil. Gently add the eggs and boil for 6-7 minutes for soft-boiled eggs. Remove the eggs and place them in an ice water bath to stop the cooking process. Once cooled, peel and set aside.

Noodles and Vegetables

    Cook the Noodles

    In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions, usually about 3-4 minutes. Drain and set aside.

    Prepare Bok Choy

    In the same pot of boiling water, blanch the bok choy for 1-2 minutes until tender. Remove and drain.

Assembly

    Assemble the Ramen

    In a bowl, add a portion of ramen noodles. Pour in the hot broth, then top with slices of chashu pork, halved soft-boiled eggs, blanched bok choy, and chopped green onions. Garnish with nori sheets and sprinkle sesame seeds on top.
