Prepare the Vegetables

Wash and chop all the vegetables as needed. Make sure to julienne the carrots and slice the zucchini, bell peppers, and onion.

Make the Sauce

In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, cornstarch, and water until smooth. Add red pepper flakes to taste.

Heat the Pan

In a large skillet or wok, heat a tablespoon of sesame oil over medium-high heat.

Stir Fry the Vegetables

Add the sliced onion, minced garlic, and grated ginger to the hot pan. Stir-fry for about 1-2 minutes until fragrant.

Add the Remaining Vegetables

Add the bell peppers, broccoli, carrots, snap peas, and zucchini to the skillet. Stir-fry for 5-7 minutes or until the vegetables are crisp-tender.

Add the Sauce

Pour the prepared sauce over the vegetables in the skillet. Stir to coat the vegetables evenly with the sauce. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Serve

Remove from heat, serve hot over rice or noodles, and enjoy your vegetable stir fry!
